Rye is a good source of fiber, vitamin E, calcium, iron, thiamin, phosphorus, and potassium (hormel). It is not a significant world crop, and globally only contributes 7-8 calories daily per capita (down from 35 calories/day in the early 1960's). But many people do not consume rye, so those figures can be misleading. In Europe, the top three consumers of rye obtain over 200 calories/day from this grain on average from 2001-2003.
